This is such a quick pick-me-up for breakfast or lunch. I get a bit bored of avocado on toast sometimes so like to mix it up with other toppings, and a little feta goes a long way 😉 It’s also amazing with a poached egg on top (well, what isn’t!)
2 slices of seeded, wholegrain or rye toast
Half a large avocado
Feta cheese to crumble on the top
A few plum tomatoes
To season: salt, pepper and chilli flakes to taste
Mash the avocado in a bowl with a fork and add a generous pinch of salt and pepper. Spread it thickly over the toast and add the tomatoes and feta on top.
Warm through under the grill for two minutes until the cheese starts to soften, then serve with some scattered chilli flakes. Enjoy!
