A very vegan dinner party

I love eating out with friends but sometimes it’s nice to show off a bit and throw an impromptu dinner party to show them you care (not to mention save a few pennies!).

I thought I’d change it up a bit this week and invite my friend who I usually eat out with over for dinner. Neither of us are fully vegan but I love the plant-based, alkaline philosophy and enjoy the challenge of preparing food that’s delicious and satisfying but still good for you.

Here’s what I made (serves 2):

Green Smoothies

Juice 2 pears and 1 apple, and add to a blender with half an avocado, 2 handfuls of spinach, 1 handful of blueberries and a dash of almond milk. Blend until smooth!

Summer Kale Salad

N.B. I stole this recipe from Deliciously Ella ! See her blog for delicious vegan eats.

Ingredients:

As much raw kale as you want!
Half an avocado
Pomegranate seeds
Pumpkin seeds

For the dressing:

2 tbsps olive oil
1 tbsp soy sauce or tamari
1 tsp tahini
1 tbsp apple cider vinegar
Juice of half a lime

Stir the dressing together then add to the kale – make sure you remove the stalks! ‘Massage’ it until it wilts slightly, then add the avocado, pomegranate and pumpkin seeds.

Berry Chia Pudding

Ingredients:

Almond milk
1 handful strawberries, chopped
1 handful raspberries
1 handful blueberries
1 banana
6 tbsps chia seeds

Chuck all the fruit and almond milk in a blender (pour the almond milk so it’s just covering the fruit) then blend. Once that’s done, add the chia seeds and give it a good stir or blend again on a slow setting. Then pop the mixture into a jar or container with a lid, and leave in the fridge for an hour or two. If you can, leave overnight to get the full mousse-like effect. Serve topped with fresh berries!

All of this stuff was super easy to prepare so no excuses for people who say vegan food or clean eating is hard! Summer is the perfect time to try it out too as let’s face it, you’re not gonna want salad for dinner in the winter 😉
